As a child, nothing brought a bigger smile to my face, than the sound of an ice cream truck. The minute I heard the jingle, I would run to my parents for a dollar and then chase the truck down like my life depended on it. I had my favorites.....lucas (do you remember this?), snow cones, and .....the chocolate chip cookie sandwich.
Well, yesterday it was 90 degrees....and no ice cream truck in sight. Yes, I'm not a child anymore.....but that doesn't mean I can't eat like one! So I decided to replicate my childhood favorite from the comfort of my kitchen. I used a Trader Joe's Buttermilk Pancake Mix for the chocolate chip cookies.
Here is the recipe:
Chocolate Chip Cookies
1/2 cup (1 stick) butter, softened
2 eggs
2 tsp vanilla
3 cups Trader Joe's Baking Mix
1 cup packed brown sugar
1 cup chocolate chips
Add softened butter, eggs, and vanilla to a large bowl. Blend with a spoon until creamy. Stir in baking mix, sugar, and chocolate chips. Using a tablespoon, drop spoonfuls of dough onto a lightly greased cookie sheet, 2 inches apart. Bake in a 375 degree oven for 10-12 minutes or until light golden brown.
Let cookies cool. Then, top with your favorite ice cream. I used chocolate chip cookie dough:). Sprinkle with mini chocolate chips (the more chocolate...the merrier). Freeze until ready to serve....OR.....just take a big, huge, ginormous, sloppy bite and let the ice cream just run down your chin.
