Chocolate Covered Brownie Ice Cream Sandwich

I wanted to love this recipe SOO BADLY. I really did. I mean, brownie, ice cream, melted chocolate. How hard could it be? Unfortunately, I had an extremely hard time with it. I pretty much spent all day assembling the darn thing. And I think I bit off more than I could chew. From "spreading" the ice cream on the brownie to dipping it in the melted chocolate.....the whole thing just didn't work for me. And somehow...at the end....the ice cream magically disappeared from the center. I don't know where it went. And I have no idea where I went wrong. It felt like a relationship that ended on bad terms. And now.... I'm in desperate need of closure lol. If you ever decide to try this recipe, I would love to hear how it worked for you. P.S. Aside from the annoying prep part and not so nice presentation, the ice cream sandwich itself obviously tasted amazing. P.S.S. I get so frustrated when my finished product doesn't look even remotely close to the perfect picture Jaime posted! Next time, I'll think twice before making an ice cream dessert.

  3. I hate when recipes I REALLY want to like, don't work out :( my guess is the ice cream melted and absorbed into the brownies. Oh well, at least you got a good dose of chocolate out of it!

  24. Haha, I have a feeling mine would've had a similar outcome! When I attempt desserts I usually call a much more apt baker friend over to assist, and we make a girlfriend date night out of it. It's fun, and I usually learn a thing or two. :)
