Chewy Pumpkin Chocolate Chunk Cookies











I searched high and low for this pumpkin cookie recipe. I was tired of cakey pumpkin cookies. Cakey texture should be reserved for cake. Cookies should not be cakey. Cookies should be soft and gooey in the center and have crispy edges. For some reason, that's very difficult to achieve with pumpkin cookies. But this cookie changes it all. It's everything you would imagine a chocolate chip cookie to be. Only more. It has a wonderful pumpkin flavor (not too overpowering) and it's slightly spicy. Perfect for the holidays or a cookie exchange party. P.S. What sets these cookies apart from regular pumpkin cookies....the recipe calls for pumpkin butter instead of pumpkin puree. Enjoy:)!

  18. Hmm I had no idea about pumpkin in sweets, I don't actually fancy it unless its part of something savory and served for dinner! Hehehe I don't understand the crazy fall fascination with it this time of year LOL! Kind of makes me sick to see it in desserts for some reason but that's just my brain being unable to process something savory with sweet. Like chocolate and meat. :o) buuut your cookies look amazing and if you were to feed me some and not mention the word pumpkin, I'd totes scoff these down, probably would still eat them even if you mentioned pumpkin too!
